The Herbert Hall Winery makes only Traditional Method English Sparkling Wines. The house style is defined by balance and elegance with an emphasis on expressing the purity of organically-grown fruit vintage by vintage. The main cuvée is Herbert Hall Brut (40% Chardonnay, 30% Pinot Noir 30% Pinot Meunier). They also make a limited edition (2,500 bottles) of Brut Rose (40% Pinot Noir, 30% Chardonnay, 30% Pinot Meunier).
These cuvées combine steel tank and barrel fermented wines which are blended to add complexity and richness and depth to the finished wines. The winery makes a special cuvée for HRH The Prince of Wales and depending on seasonal conditions produces a series of limited edition special releases – usually single barrel wines
